Professor Dimitris Kouretas from the Thessaly University Biochemistry and Biotechnology department is among 12 researchers from 10 EU countries who presented their research findings at an event on innovation in medical technology, organized by the European Commission in Brussels, on February 26. The 12 scientists were shortlisted out of a total of  600, with Kouretas being the only representative from the entire southeastern Europe to be selected.

Kouretas and his team have manufactured their first bio functional food through processing dairy manufacturing by-products, particularly whey, in order to make food of high nutritional value.

The whey protein cake is currently available in processed form of Feedback cake, Cocoa Protein Cookie and Feta Bar. The product can also be used as food aid to countries with high rates of malnutrition.

It can also rid the environment of by-products poured into rivers or streams generating a chain of negative effects on public health, crops and the quality of drinking water.

Apparently, the work done by Kouretas and his team has caught the attention of ARTE TV network, which is currently producing a documentary on the Greek researcher and his team, titled The New Beginning, to be screened in France and Germany, on June 9.
