George Terizakis has his plate full. He is the recipient of the Hellenic Entrepreneurship Award in 2013 and the founder of      Stella Mare which excels in organic processing of fresh Greek fish within 24 hours after it is caught. The company aspires to promote conserved Greek anchovy and sardine fillets through an innovative type of processing, which is applied in only five other plants worldwide. The family business is based in Marathopoli, Messinia and Terizakis Senior says the family counts three generations of experience in fisheries.

The fish comes packaged without any preservatives: "Everything inside the package is homegrown" says Terizakis and the olive oil of Messinia is one of the finest in the Mediterranean. Anchovy has long been an important catch in the warm waters of the Mediterranean. The Greek style of cooking it is frying it in olive oil until the skin is crisp. As for sardines, an equally popular dish for the Greeks, only few people know that the fish is one of the richest sources of omega-3 fatty acids, important for normal metabolism.
